Mix together the cookie dough ingredients in a food processor or blender until it becomes a paste like texture.
For the apple layer, add the chopped apple, apple puree and sweetener to a pan and simmer for ten minutes.
Put the brownie layer into the bottom of a cake/brownie pan lined with clingfilm and then spread the apple mixture over it.
Freeze for two hours.
When this has cooled spread the cookie dough mixture onto the apple layer and freeze for another two hours until it’s set.
When it’s set remove the slab, cut into squares and enjoy!
*I used my brownie recipe for the base, but the blondie recipe would also be great or a base of crushed biscuits.
