Gluten free, dairy free and refined sugar free Blueberry and Chocolate Protein Loaf!
Pre-heat the oven to 185C.
Mash the banana.
In a separate bowl whisk the egg white and add the apple sauce and sweetener and mix well.
Combine the banana with the egg white mixture and add the rest of the ingredients (save a few blueberries for decoration if desired). Mix until a batter like mixture is formed.
Pour into a lined loaf tray and decorate with sliced banana and blueberries.
Bake in the oven for 45 minutes, until a skewer can be pierced into the middle and come out clean.
*You can purchase unsweetened apple sauce from supermarkets (Tesco Kosher section for example) or you can make your own by cooking apples with a little water and blending when soft.
**I used Protein Works peanut and chocolate vegan protein and it tastes great. I've also used thatprotein cacao flavour. If you do not have protein powder, cacao or cocoa powder also works to the same effect and gives a richer chocolate flavour.
