Banana and Blueberry Loaf

Vanilla Banana and Blueberry Loaf

  • 270 g Banana (mashed)
  • 130 g Egg White
  • 90 g unsweetened apple sauce*
  • 45 g oats
  • 60 g vanilla protein powder
  • 15 g coconut flour
  • 120 g blueberries
  • 1 tsp baking powder


  1. Pre-heat the oven to 185C.

  2. Mix the banana, egg white, apple puree (the wet ingredients).

  3. Then add the dry ingredients (oats, coconut flour, protein powder and baking powder).

  4. Mix thoroughly and then add and mix in the blueberries.

  5. Pour into a lined loaf tin and put into the oven for 40-45 minutes until it begins to brown on top.

Recipe Notes

*unsweetened apple sauce can be bought in the supermarket or made by stewing apples and the blending. 

*protein powder could be subbed for plain/gf flour
