Slow Cooker Mole Chicken

When I was younger I thought about what ‘adult life’ would be like. I probably thought it would be filled with excitement and doing all the things I was too young to do.
Now I feel like adult life is summed up by getting a slow cooker as a present and being genuinely thrilled. And I can’t say I am disappointed that this is what it has turned out to be.
Sometimes I can’t sleep because I’m thinking about what I’ll cook in it.

Is this what S Club 7 were talking about in  ‘Never had a dream come true’? Because I certainly didn’t till I met you Crock Pot!

This recipe really could not be any easier. I surprise myself at how little prep time it takes. Just throw it all in the slow cooker at breakfast or midday and BAM you’ve got a meal by dinner.

Plus the flavour and ingredients make you feel like you’ve really turned out something different and may even impress someone. If you don’t let them know how easy it was.

Slow Cooker Chicken Mole

Throw it all in the slow cooker in the morning and have a delicious dinner by the evening.

Cook Time 5 hours
Total Time 5 hours 10 minutes
Servings 4 servings


  • 3 Chicken Breasts
  • 600 g (2 tins) Chopped Tomato
  • 200 g Mushrooms
  • 80 g Kidney Beans
  • 80 g (1/4) Red Pepper
  • 80 g (1 small) Red Onion
  • 3 tsp Cacao Powder (or cocoa powder)
  • 1 small Chilli (Diced and de-seeded)
  • 2 tsp Paprika
  • 1 tsp Chilli Powder
  • 1 tsp Garlic Powder
  • 2 tsp Garam Masala
  • 1 tsp Cumin
  • Salt and Pepper


  1. Chop the vegetables.

  2. Mix the seasonings (including the chilli and cacao powder) with the chopped tomato.

  3. Put everything into the slow cooker, including the whole chicken breasts.

  4. Cook for 7 hours on low or 4 hours on high.
