I like to make this recipe as a loaf – it can also be made as a cake, by using a cake tin and baking for 30 mins. By doubling the mixture and pouring into two cake tins you can make a sandwich cake, and I would recommend a peach compote or jam and/or a whipped cream in the centre.
Peach and Apple Cake
- 100 g Oats
- 100 g Rice or Buckwheat flour
- 100 g yogurt ((soya yogurt for dairy free))
- 100 g apple sauce/puree
- 2 eggs
- 1 tsp cinnamon
- 2 tbsp maple syrup
- 1 tsp coconut sugar
- 1 tsp baking powder
- 1 pinch salt
- 2 medium peaches
Pre-heat the oven to 185C
Mix all the dry ingredients (excluding the coconut sugar)
In a separate bowl mix the beat the egg and add the apple sauce and mix.
Add the yogurt and mix thoroughly.
Add the wet and dry ingredients together and the mix in the maple syrup.
Chop the peaches and add to the mix and lightly mix to disperse them through without making them mushy.
Pour into a lined baking loaf tin and sprinkle the coconut sugar over the top of the cake and bake for 40-45 mins until browning on top.
*if gluten-free is not required, then plain flour would suffice.
