Sundays are for pancakes and I want them chocolatey, bananary, fluffy and good for you.
As much as I love these pancakes, arguably one of the best parts is the sauce. It’s super easy, creamy and sweet.
Oat Pancakes
This is a basic customisable recipe. Feel free to add in ingredients and lots of toppings.
Ingredients
- 20 g Rolled Oats
- 10 g Protein Powder (can sub for more oats or flour)
- 50g (1/2) Mashed Banana
- 50 g Egg Whites
- 1 tsp Truvia (or other sweetener)
- 1/2 tsp Baking Soda
Instructions

Mix together the pancake ingredients and add a splash of almond milk if it’s too thick.

Then put coconut oil in a hot pan, I use 1kcal coconut oil spray. Fry tablespoon amounts of mixture for a few minutes on each side and stack ’em.
Recipe Notes
My favourite topping idea - Cacao and Coconut Sauce:
- 50g Coconut Yogurt (such as Koko, Coyo or Coconut Collaborative)
- 1 tsp Cacao Powder
- 1 tsp Truvia/Sweetener
Mix together the yogurt and cacao powder with a splash of coconut milk and drizzle over the pancakes.
(Could use plain yogurt if desired for chocolate sauce).
