I wasn’t sure whether to call this recipe a cookie recipe or a biscuit recipe because I’m not sure it really fits with either.
They definitely don’t snap like a biscuit and they’re not sticky like some cookies or crumbly like a Maryland cookie. They’re soft, slightly chewy and slightly cakey and I absolutely love them!
My favourite thing about this recipe is that they took me 10 minutes to make and with only 15 minutes required in the oven – I had fresh, healthy, cookies in no time at all!
Ofcourse they’re gluten and dairy free and free from refined sugar – because they wouldn’t be a yummyimmy cookie otherwise would they?!
Oat and Raisin Protein Cookie
Ingredients
- 100 g apple sauce
- 120 g egg white
- 50 g truvia
- 40 g coconut flour
- 40 g protein powder
- 40 g oats
- 50 g granulated sweetener (I use truvia)
- 1-2 tbsp raisins
Instructions

Preheat the oven to 185C.

Mix all the ingredients thoroughly to form a dough like mixture.

On a lined baking tray, form 12-14 cookies. (Tip: roll balls and flatten into cookie shapes with the back of a spoon).

Bake for 15 mins!
Recipe Notes
If you don't want to use protein powder, you could sub for plain flour, almond flour or gluten free flour!
