This recipe is perfect for a skillet, it keeps it really moist but with a nice bake. I also love using crumpets instead of regular toast as it is thick, absorbs the egg mixture and bakes well.
It is the cinnamon and berries that make this really bomb though!
Mixed Berry Crumpet French Toast
- 1 shredded crumpet (I use Genius gluten-free)
- 100 g egg white
- 1 tsp Coconut Flour (5g)
- 1 tsp cinnamon
- 1/2 cup frozen berries
Pre-heat the oven to 190C.
Whisk the egg white, coconut flour and cinnamon and soak the shredded crumpet in the mixture.
Add to a skillet or baking tin and add the berries.
Bake for 15-20 mins.
Top with coconut yogurt and serve!
