Meal Prep Series 1 – Lentil Dahl

2018 is well underway and January is hitting us all hard. So I am bringing you my meal prep series to give you some ideas to eat well and not break the bank.

‘Meal prep’ is not just instagram posts of chicken and rice in tupperware – it can be as simple as batch cooking some simple healthy meals.

This lentil Dahl is not only my favourite make-ahead lunch for the week but it is also really easy to make.

I use a slower cooker for this but you could also simmer on hob on a low heat, in a pan with a lid; just ensure you stir occasionally to make sure it does not stick. I would recommend investing in a slow cooker if you can, they’re £30-40 and can be bought from supermarkets/Amazon.

Lentil Dahl

Servings 5 servings

Ingredients

  • 500 g peeled and chopped butternut squash ⠀
  • 200 g red lentils ⠀
  • 1 diced red onion ⠀
  • 1 chopped aubergine
  • 500 ml coconut milk ⠀
  • 1-2 tsp tumeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp gara masala
  • 1 tsp ginger powder
  • 1 tsp dried coriander
  • chopped fresh coriander
  • 2 tsp garlic powder
  • 1 tsp chilli powder

Instructions

  1. Throw all the ingredients into a slower cooker with 1/2 cup water and leave on high for 4 hours! ⠀

Recipe Notes

Serve with salad, rice or pitta for a healthy lunch.
