French toast just seems like it cannot possibly be healthy. But all it really is, is egg and bread. If we toast the bread and poached the egg you’d be satisfied with the insta-worthy healthy breakfast, so why not in this form.
In fact, lets go one step further, egg white only and protein cream?
Hold the salad for lunch because you’ve already nailed healthy for the day…
French Toast with Strawberry and Coconut Protein Cream
- 1 slice Bread (I use Bfree Oaty bread)*
- 50 g egg white (approx 1)
- 1/2 tsp cinnamon
- 1 tsp stevia or sweetener (optional)
- 50 g coconut yogurt (e.g. KOKO, Coyo, or Coconut Collab)
- 3-5 chopped strawberries
- 1 tsp protein powder
- 1 tsp stevia or sweetemer (optional)
Mix the cinnamon, stevia and egg white.
Soak the bread in the egg white until it is mostly absorbed.
Heat a little of your oil of choice in a pan (1 cal coconut spray) and on a medium heat fry the eggy bread on each side. I pour any excess egg white mixture onto the bread in the pan also.
Mash the strawberry and add it, with the protein powder and stevia too the yogurt and mix thoroughly.
When the french toast is done, add to a plate and spoon over the protein cream. Top with fresh strawberries.
