I find easy Sunday baking really therapeutic and when I can make something that I can use for healthy snacking throughout the week it is such a bonus. These coconut and peanut butter oat cookies are an ideal make-ahead afternoon snack as the natural sugars, slow release carbs and protein are ideal for that 4pm boost.
I love the berries for an extra burst and flavour and colour.
Coconut and Peanut butter Cookies
with red berries
- 100 g oats
- 75 g coconut flour
- 110 g unsweetened apple purée
- 1 egg
- 30 g peanut butter
- 1 tbsp protein powder (optional - swap for buckwheat or plain flour)
- 50 g berries
- 1/4 tsp baking powder
- 1/4 tsp salt
- Splash almond milk
- 1 tbsp Sweetener of choice if using granulated rather than liquid sweetener add a little more almond milk (Optional)
Pre-heat the oven to 185C.
Mix all the ingredients together.
Make into equal cookie shapes about 1cm thick and place onto a lined baking tray. Try to make sure the berries are evenly distributed throughout the cookies.
