I love experimenting with different flavour combinations. You can make cakes that sound impressive/fancy/complicated but are in reality very simple.
Cakes such as this Chai and Ginger Loaf allow you to fool people into thinking you know what you’re doing.
It also has a really fresh, summery, natural flavour that satisfies the sweet tooth without all the sugar. It also is not laden with saturated fat such as butter and refined carbohydrates, instead it relies on oats and buckwheat flour for its substance, which makes it a great snack to get you through the afternoon.
Chai and ginger loaf
- 100 g oats
- 100 g buckwheat flour
- 50 g vanilla or plain protein
- 100 g yogurt I use soya for dairy free
- 1 root ginger grated
- 100 g apple sauce
- 50 ml almond milk
- 120 g egg white
- 1 tsp baking soda
- 3 chai tea bags
- Pinch salt
- 2 Tbsp Sweetener (such as stevia, I use truvia) (Optional)
Pre-heat the oven to 185C.
Whisk the egg white and add the apple sauce, and yogurt and mix thoroughly.
Add the oats, buckwheat flour, protein powder, baking soda and salt and combine.
Empty the contents of three chai tea bags into the mixture and mix it all together.
Grate in the ginger and add the almond milk.
Pour into a lined loaf tin and bake in the oven for 45 minutes until golden.
You can sub the protein powder for more buckwheat flour or oat flour (blend oats in a blender) if you'd prefer a non-protein loaf
