Breakfast Skillet Cookie

There really can be nothing better than eating a cookie for breakfast. It is like doing everything your parents never let you do unless you were on holiday. It is better than coco pops and saturday morning cartoons.

It is an ideal low-carb, high protein, refined sugar free breakfast. Coconut flour adds good fats, protein and is low-carb – it also creates a nice gooey texture for the cookie.

You can mix this recipe up and add any fruit, granola, nuts, chocolate, or dried fruit, to the mixture and there are so many topping options also. Much like oats or pancakes, this is a really versatile recipe that will let you change it up so you do not get bored of your breakfast.

Breakfast, brunch, dessert - whenever you fancy!

Servings 1 Serving

Ingredients

  • 20 g coconut flour
  • 10 g flavoured protein powder I use @theproteinworks Chocolate Peanut
  • 50 g egg white
  • 30 g apple sauce
  • 1 tsp baking powder
  • handful of berries

Instructions

  1. Pre-heat the oven to 190C
  2. Mix all the ingredients.
  3. Pour into the skillet and add the berries.
  4. Bake for 15 minutes.
  5. Topped with coconut yogurt.
