This is a family favourite and I often find myself having to whip one up whilst my dinner or lunch is cooking, to satisfy someone’s request or because the last one mysteriously vanished. Thankfully it is so quick and easy I can do it very little time leave it to cook.
If you use protein powder as I do in this recipe it adds extra nutritional benefit as well a great flavour. However, cacao or cocoa powder can also be used.
Blueberry and Chocolate Banana Loaf
Gluten free, dairy free and refined sugar free Blueberry and Chocolate Protein Loaf!
- 270 grams Mashed Banana
- 130 grams Egg White
- 90 grams Unsweetened Apple Sauce*
- 30 grams Maple Syrup ((Honey/Agave))
- 15 grams Coconut Flour
- 60 grams Chocolate Flavoured Protein Powder**
- 45 grams Rolled Oats
- 120 grams Blueberries
- 1 tsp Baking Soda
- 50 grams Truvia ((Or alternative sweetener_)
- Extra Banana for decoration
Pre-heat the oven to 185C.
Mash the banana.
In a separate bowl whisk the egg white and add the apple sauce and sweetener and mix well.
Combine the banana with the egg white mixture and add the rest of the ingredients (save a few blueberries for decoration if desired). Mix until a batter like mixture is formed.
Pour into a lined loaf tray and decorate with sliced banana and blueberries.
Bake in the oven for 45 minutes, until a skewer can be pierced into the middle and come out clean.
*You can purchase unsweetened apple sauce from supermarkets (Tesco Kosher section for example) or you can make your own by cooking apples with a little water and blending when soft.
**I used Protein Works peanut and chocolate vegan protein and it tastes great. I’ve also used thatprotein cacao flavour. If you do not have protein powder, cacao or cocoa powder also works to the same effect and gives a richer chocolate flavour.
