Although I am not strictly vegetarian or vegan, I rarely eat meat and love to find different ways of making meals that are not centred around the meat. Rather the focus becomes the flavours and different elements.
This recipe also goes great with a number of dishes. Throw it in a sandwich or serve it with sweet potato fries, or in a taco. There are loads of options.
BBQ Pulled Jackfruit
Serve with sweet potato fries, rice and peas, or as a sandwich filling!
- 150 g Jackfruit
- 50 g red onion
- 1/2 cup BBQ sauce or make your own
- 2 tsp chipotle
- 1 tbsp (20g) ketchup
- 1 tsp garlic powder
- 1 tsp paprika powder
- 1 tsp spicy mustard
- Splash balsamic vinegar
Sauté the onions until soft.
Added the jackfruit and a cup of water and let simmer.
After 5-10 minutes as the fruit cooks and becomes soft, use forks to pull apart and mash the jackfruit so that it looks like pulled pork.
Then simply add BBQ sauce and simmer until the sauce is thick. If making your own BBQ sauce, simply mix all the sauce ingredients together and add to the jackfruit.
Once the bbq jackfruit mix has thickened, pour onto a lined baking tray and bake in the oven for 10 minutes at 190C. This is not strictly necessary, however, it adds to the texture and flavour of the Jackfruit and makes it firmer.
I bought the tin of jackfruit from an Asian supermarket - make sure to choose jackfruit in water or brine and not syrup.
